Within months of beginning to collaboratively research mushroom root (mycelium) together as 兔子先生传媒文化作品 PhD students, 听(Civil, Environmental and Architectural Engineering) and 听(Mechanical Engineering)听knew they had a nature-based tool for taking on many global issues. They decided to start a company that would guide fungi鈥檚 miraculous biotechnological power toward efficiently meeting humanity鈥檚 needs. When their deeper investigation of crafting protein from mushroom roots crossed paths with growing public alarm about the food system, they founded Emergy in 2015, now eat meati鈩, a company that provides delicious, nutritious听and Earth-friendly nutrition to everyone.听The core technology behind Meati Foods鈥 products involves mycelium-based fermentation to create meat alternatives. This technology was developed, in part, during their time as researchers at the University of Colorado Boulder.
